Our Fresh Milled Flour Journey Begins

Last November I heard a podcast that set our family and ministry on a new path. I can't even remember the particular podcast name, but Sue Becker from Breadbeckers was being interviewed about the benefits of milling your own flour at home to make bread and other baked goods. I had never heard anyone talk about the health benefits in scientific detail like she did. To hear that whole grains, aka wheat berries and other unprocessed grains, "contain nearly 90% of all the vitamins, minerals, protein, carbohydrates and fats that our bodies need", and "wheat alone has 40 of the 44 nutrients considered essential to sustain human life" was mind blowing. And also to learn how nutrients have been stripped out of the flour and bread we buy on the shelves, all of this was simply a game changer for us. It all just clicked and we haven't looked back. We bought a grain mill in November of 2024 and have been milling every since. I make all of our yeast bread, sourdough bread, muffins, cookies, pancakes, you name it, with the freshly milled flour. I wrote some of the following on our facebook ministry page in January:
"Then Jesus declared, I am the bread of life, whoever comes to me will never go hungry, and whoever believes in me will never be thirsty." John 6:35
Do you ever wonder why Jesus called himself the bread of life, yet man calls bread bad and often excludes it from a "healthy" diet? We have been learning so much the past few months about whole grains, eaten the way God designed and intended. We have been milling our own flour from organic wheat berries and it is transforming our health, and our ministry!
Here at the Lodge, we want people to come and be nourished, both in body and soul. We were stirred, and at odds, especially me, because of my love of baking for people, about making food for people that wasn't completely nutritious. Almost everything we do here is centered around food at the table. Switching to freshly milled flour has erased that concern! It has also caused us to begin taking other processed food out of our diets, as we no longer craved sugar and other ingredients that aren't good for us.
We already have testimonies right in our own lodge community and family of how the whole grains are changing our health. For me personally, my sugar addiction is broken, I have significantly more energy, no more brain fog, inflammation gone, and my blood sugar is stabilized on a consistent basis.
Freshly milled flour holds in all the nutrients, vitamins, and minerals that God intended it to have for us! This is why when he called himself the bread of life, people in his day would have completely understood what he meant. He is complete sustenance for our souls, just as real bread is complete, physical sustenance for our bodies.
I didn't have to stop baking at all, I just needed to change the flour! Knowing that people who come to the lodge are nourished in this way is so fulfilling. This was the missing link we needed! We spent so much time focusing on spiritual nourishment, and that is what we will still focus on. But now, all those who come to break bread with us will truly be nourished in both body and soul.
If you visit us, I promise you will still enjoy delicious cookies, breads, and other goodies. They are now just all made with freshly milled flour, and flavored with honey, healthy oils, and other real ingredients. And surprise surprise, everything is delicious! I like to say that I had never truly tasted bread before making it with fresh milled flour. God's way is always the best way!
A couple of months ago, I had the joy of talking with Sue Becker on her podcast, Sue's Healthy Minutes. I've linked Episode 159 here, just in case you'd like to take a listen :)
